Step 1: A maple tree is found.

Step 3: Pick up your supplies.
To tap a maple tree, you will need a bucket with a cover, a spile, and a drill.It would be helpful to have a large clean trash can or similar vat that you can use for storage.Clean the spile, bucket, and cover with bleach and water.Before use, make sure they are completely dry.You will need either a 7/16 or 5/16 drill bit for your drill.
Step 4: Where to tap?
The best place to tap is on the tree.You want it to be easy to reach.The south side of the tree gets the most sun during the day.It is best to tap above a large root or branch.Make sure your new spile is at least 6 inches away from the old hole if the tree has been tapped before.The tap should be placed in a section of wood.The wood is healthy if it is light brown or tan.If the shavings are dark brown or chocolate colored, find a new place to tap.It is a good idea to drill on a sunny day to minimize the chance of splitting the wood.
Step 5: You need to drill a hole.
The drill should be held slightly upwards to make the flow easier.It's best to drill in 2.5 inches.To find out how far you can drill, tape your drill bit 2.5 inches from the end.A sharp drill bit can be used to avoid creating a rough hole.Once you have finished drilling, remove the wood from the hole.
Step 6: The spile is in the tree.
To make sure it is strong enough to be pulled out by hand, use a rubber mallet or hammer.If you hit the spile too hard, you run the risk of splitting the wood.You can make your own spile using 38” aluminum piping.It is toxic to the tree to use copper.To use it as a spout, widen one end.
Step 7: Hang it.
Attach it to the end of the spile, or use a wire to hook it up to your spout.The bucket needs to be secured so that it doesn't get knocked off by the wind.The cover should be over the top of the bucket.
Step 8: Wait for the water.
It is the warmest in the afternoons.You can collect sap for a month if the weather is good.Depending on the environment, a healthy tree can provide between 10 and 80 gallons of sap.If the daytime temperature does not rise above freezing or if the nighttime temperature becomes too warm, sap will stop flowing.An empty trash can is a good place to collect your sap.If you don't, you'll have a lot of full buckets taking up space.If the temperature goes above 45 F, the sap needs to be refrigerated.It will start to growbacteria if it isn't preserved.
Step 9: Your supplies are ready.
An outdoor gas range or wood stove is required.You will need storage containers and a cloth syrup filter.It's a good idea to avoid boiling your sap indoors.If you want to boil the sap indoors, you can use a dehumidifier to reduce the amount of steam that is produced.It is helpful to have a candy or syrup thermometer.The best maple syrup is created by using a wood stove.
Step 10: You have to boil the water.
The sap needs to be at least 11 inches deep to prevent it from burning.If you are prepared, you will get a lot of steam.Add more to keep it at the 11.5 inch level.It is possible to pre-warm the boiling sap.The water should be boiled until it reaches 219 F.It will give you pure maple syrup.If you want to make maple sugar, continue boiling until it reaches 234 F.
Step 11: The syrup should be removed.
If you want to separate out the sugar sand that formed during the boiling process, use a cloth maple syrup filter.When it is hot, filter the syrup between 180 and 200 F.Before you use the syrup filter, make sure it's in hot water.It will help the syrup to filter better, and also kill anybacteria that might have been attached to the filter.Store syrup that is waiting to be processed in a closed container to maintain its heat.If the syrup cools too much, bring it back to its original temperature.As you could burn the syrup, be careful of overheating it.The filter may need to be replaced if the syrup is pouring through it too quickly.It should pour more than it shouldooze.
Step 12: You should store your syrup in a container.
Once you open the container, you can keep the syrup refrigerated.For a delicious maple flavor, use it in recipes and on your food.
