There are two parts to this recipe.We will get to the filling recipe after we start with the doughnuts.You will need a large bowl and a small bowl.There is a large bowl for dry ingredients and a small one for wet ones.
Put your flour, sugar, baking powder, salt, and nutmeg in a large bowl.Make sure that everything is in place.The egg, milk and butter should be put in a small bowl.Combine the wet and dry ingredients in a large bowl.Make sure to stir them well, as you don't want any mess in your dough.
You can deep fry these with either a cast iron skillet, electric skillet or deep fryer.Make sure you use oil that is at least 375 degrees.Dropping the dough into the oil is all you have to do.I used a small scoop.A spoon works great as well.
Depending on the size of the skillet or deep fryer, I do about five or six of these at a time.They won't get golden brown if you overload it.Fry them for a couple of minutes.Put the oil on some paper towels to get rid of any excess oil.The doughnuts should be rolled around in cinnamon sugar.
The filling recipe is very easy to make.You can put a cup of room temperature cream cheese in a bowl.It will be easier to work with if it is room temperature.Depending on the amount of cream cheese you like, you can use either measurement.
You can combine the cream cheese with the sugar and extract.Begin to add your milk a little at a time by stirring that together.It may make your filling too thin if you add it all at once.The back of your spoon should be covered with the filling, not the frosting.
Put the icing into a piping bag or bottle with a nozzle and insert the tip into the doughnuts.Don't be skimpy with the filling.The filling should be worked into as much of the doughnut as possible if the tip is moved around.If served warm, these are the best.

I am not getting anything.A little donut hole can be filled with a squirt bottle.I must be mossing something because I can see a basting injector.If it had the right attachment, it could be a piping bag.Do you fry them or not?
I apologize for the confusion.It is less of a squeeze bottle and more a piping bottle.A bag like that would work great.
I haven't tried it yet but what about making the filling in advanced freezing it and cutting it into squares and forming the dough around the frozen filling and then frying them?
