A rich Mexican stew made with tripe, pig's feet and spices.It is eaten with bread rolls or rice to get the sauce.Menudo can be eaten during holidays and special occasions.
Step 1: Prepare the tripe.
Shake it dry after washing it in cool water.Remove the extra fat with a knife.Once all the fat is trimmed, place it onto the cutting board and dice each piece of tripe into bite-sized chunks.Put the tripe aside and rinse it with water.
Step 2: Cut the pigs' feet.
Take them out of the water, pat them dry, then cut them in half.Use calves' feet to make white menudo.
Step 3: Take the garlic and slice it.
The garlic cloves have layers of skin.Place the cloves on the board and cut them in half.These should be placed aside.
Step 4: Take the onion and slice it in half.
The skin of the onion should be removed.Cut the onion into bite size chunks by placing it on the cutting board.These should be set aside.
Step 5: Put the peppers in a pan.
The water should be brought to a boil.The peppers should be placed in the boiling water with the garlic cloves.Remove the pot from the heat when the peppers are soft.
Step 6: You can blend the pepper water.
The peppers, garlic and water should be put into a blender.
Step 7: The tripe and pigs' feet must be boiled.
Place them in a large stockpot and top it with 2 gallons of water and garlic.The water should be boiled.As the ingredients cook, skim the foam from the top of the water.
Step 8: The heat should be reduced to a simmer.
Continue cooking the meat until it's tender, about 3 hours.
Step 9: Put the pepper mixture in it.
The pepper mixture has excess water.The peppers should be put in the stockpot.
Step 10: Add some salt to it.
Add salt to the menudo.If it needs more salt, add more after 15 minutes.
Step 11: You can stir in the hominy.
The can of hominy should be poured into the stew before you serve the menudo.
Step 12: You should serve the menudo.
Menudo is usually served with fresh chopped onion and bread rolls.
