I tried roasting chestnuts in the microwave.I roasted the chestnuts because they are eaten with sunflower seeds, hickory nuts and walnuts.About 1/3 of the nuts had mold on them.Those that weren't molded were hard to chew on.The chestnuts that weren't moldy looked like the ones in your picture.I assumed chestnuts would be roasted before they were eaten.The chestnuts on the plate were too hard to eat in the microwave.I would use 3-4 shelled chestnuts and increase the microwave time until I used 123 or more.After they were cool enough to handle, the chestnuts were as hard as rocks.Is the problem the microwave or me?I would like to thank you for your time.
Your chestnuts might not have been fresh.They have a very short shelf life.It is possible that you did not microwave them long enough.When I roast some, it takes 3-4 minutes for the shell to peel back.If that isn't the issue, maybe give it one more go.
Chestnuts are firm when ripe, but not like a hard cheese when cooked.I have never come across a problem like roast almonds.They might have been picked before they were ripe.Cheers, John.
I cook my chestnuts in the stove top; in a cast iron saucepan with the lid on; and on the lowest gas setting, the saucepan becomes a mini-oven for the ten or so minutes they are left to roast.

I find that scoring, then soaking in water for a few minutes before cooking makes the nuts softer.It's a good idea to cover the dish or container to keep it moist while cooking.It's easier to peel off moist shells.
