These corn muffins turned out great when I fixed the wet to dry ingredient.When I first looked at the recipe, I thought 1/3 Cup of milk and one egg was not going to be enough wet ingredients.I was correct.Either I read the recipe wrong or it was printed wrong.I put the 1/3 Cup of milk, the one egg and the oil in with the dry ingredients and tried to mix them...It is impossible.There was not enough liquid to make up for a third of the dry ingredients.It finally looked like a corn muffin batter after adding another egg and a full cup of milk.I spooned the batter into the muffin tins after melting butter in the oven.The muffins were perfect....It was tender and delicious on the inside.I made the adjustments and this recipe is still a good one.
