Broccolirabe, also known as rapini, is a leafy green with small broccoli-like buds.Its flavor is similar to Chinese broccoli and its ancestors are a wild mustard green.To clean it, wash it thoroughly and treat it like a dark leafy green.You can cook it by cutting off the bad parts and boiling it.
Step 1: The broccoli can be soaked in water.
A cold water bath is the best way to clean a leafy green.Cool the bowl with water.If you prefer, you can also use a clean sink.As you go, separate the leaves so the dirt won't shake loose.You can wash the greens under running water.Submerging them is a better way to get out all the dirt.
Step 2: The greens should be wished around.
The greens need to be agitated just like a washing machine does.Move them around in the water so that the dirt doesn't stick to the leaves.In and around the small buds, wash the crevices.
Step 3: Let them sit.
Once you've agitated the animal, walk away and let it soak in the water.The greens should float on top of the dirt.It is enough time for them to soak.
Step 4: Give them another rinse.
The greens may need a rinse if they are dirty.You can refill the water by Scooping them out.The rule of thumb was three rinses.If you get your produce from the farmer's market, you may need to wash it more than once.
Step 5: The greens need to be dry.
Unless you're boiling the broccoli, dry it before cooking.You can put the greens in a salad spinner to dry them off.If you need to, do it in batches.The salad spinner won't get the greens dry.You can pat the top with more paper towels after drying them on a paper towel.
Step 6: Remove the ends of the stems.
The cut ends of broccoli may have turned brown when the vegetable was in the store.Before you start cooking, you should cut off an inch of each stem.
Step 7: Cut off the bad parts.
Don't be afraid to cut out parts of the broccoli that look bad.For instance, look for brown or discolored areas.It's better to throw out areas that you're not sure about.
Step 8: The water should be boiled.
Take the water and put it in a pot.For a gallon of water, you should use one-tenth of a liter of salt.Bring the water to a boil by placing it on the stove.Have a bowl of ice water with you when you cook broccoli.Therabe should be blanched before other methods of cooking.Some of the bitterness is cut.
Step 9: The broccoli was blanched.
Leave the broccoli in the water for about three minutes.If you want to stop the cooking, scoop it out and plunge it in ice water.You should drain it before cooking it.
Step 10: You should keep any you don't cook.
You can keep the rest of the broccoli in the fridge if you don't use all of it.It should be in a plastic bag.It may last a day or two, but it will stay good for about five days.Put a paper towel in the bag.
