Vacuum sealing speeds up the marinating process significantly. The science of it is that vacuum sealing, in essence, lowers the pressure inside the bag. The low pressure causes “suction,” and the liquid you have put inside reaches the meat more quickly. Additionally, the meat absorbs the liquid more quickly.
How long does it take to marinate with FoodSaver?
After your bag is completely closed, place it in the refrigerator for at least 30 minutes. The longer you leave it in the fridge, the longer the meat or vegetables will be able to soak in the marinade. If you're trying to get the process done quickly, the food can be removed after a half-hour.
How do you use vacuum sealer to marinate?
- Place meat or other food in vacuum bag.
- Add marinade to bag, careful to keep seal area dry (bag stand may help with this)
- Place bag in chamber sealer, and run two full cycles.
- Remove bag and place in refrigerator until ready to use (a few hours in the refrigerator will improve flavor even more)
